I'm very, very jealous of that delicious looking cassoulet Jocelyne... The confits look just spectacular. I hope you wrote down the address of where you went! You might be taking me, Kim & Nick there one day!

I haven't made my own duck confit in ages, so the best I can do here is Rougie canned duck confit, which is not great, but it's pretty good if you fry it briefly with some rosemary after openning the can.
